So, I have decided to start a "new thing". Each week, Ty and I are trying to make more of our meals and eat out less (I posted about this idea here). So, each week on Monday I will blog about what I made and we will call it:
Hopefully, this will help inspire you to start cooking at home more! Just in this last week of cooking, we have spent more dinners together and really enjoyed having this to look forward to! Our marriage needed a fun little pick me up of time together, and this has really been fun!
This past week, we were able to spend time with Ty's family (Seth came home for a week!) so we didn't have our regular meal for Friday. We also hosted a lock in with the youth on Saturday (more on that later!) so we really only made our scheduled meals for Tuesday and Thursday but they were both yummy!
Meatloaf Joes were what we made on Tuesday and they were super delicious! You can read the recipe here! One thing that we would change is we would have used two pounds of meat instead of one. We had a lot of extra "sauce" and it made it pretty runny! We also decided to use sandwich bread since we already had some, but it fell apart way too easily, so we would definitely follow instructions and use hamburger buns next time!
Fiesta Chicken Casserole was what we made on Thursday and it was great! Here is where you can find the recipe! We put 1 lb of chicken in the crock pot with water all day so pulling it apart was really easy. I used a 9 x 13 pan instead since I didn't have an 8x8 and only cooked the casserole for ten minutes and it was done! Just another option if you don't have the right size pan!
Recently, I have been diagnosed (if that is the right word to use) with being lactose intolerant. So, here is where you come in: if you have any great lactose/dairy free meals, please share them! We would love to try them out and my tummy would appreciate that =)
